Welcome to the very first edition of the HolisticXpressions Nourish & Restore Journal!

I’m so excited to finally launch this weekly space where I can share some of the vegan recipes we’re enjoying in our home, wellness inspiration, podcast updates, and news from HolisticXpressions.

I’m also happy to announce that the new HolisticXpressions website is now live! While it’s still a work in progress, the foundation is in place and new content, resources, recipes, and offerings will continue to be added in the coming weeks and months. Thank you for joining me on this journey as HolisticXpressions continues to grow and evolve.

🌈 Nourish: Rainbow Buddha Bowl

One of my favorite meals this week was this colorful Rainbow Buddha Bowl. Packed with fresh vegetables, fruit, healthy fats, and plant-based protein from walnuts, it’s a beautiful example of how nourishing food can also be vibrant, satisfying, and full of flavor.

The sweet crunch of apples pairs wonderfully with the savory walnut crumble and creamy peanut dressing, creating a bowl that’s both refreshing and filling.

Rainbow Buddha Bowl

Base

  • Lettuce

  • Red cabbage

  • Spinach

  • Carrots

  • Cucumbers

  • Green onions

  • Sweet onions

  • Apples

Walnut Crumble

½ cup walnuts

1 tsp soy aminos

1 tsp nutritional yeast

½ tsp smoked paprika

¼ tsp garlic powder

¼ tsp onion powder

Pinch of cumin

½ tsp maple syrup or date syrup

Directions:

Pulse all ingredients in a food processor until crumbly. Allow the mixture to marinate for 10–15 minutes before serving.

Creamy Peanut Dressing

3 tsp peanut butter

1 tbsp soy aminos

1 tsp lemon juice

1 tsp agave or date syrup

Pinch garlic powder

1 tbsp vegetable broth (or water for a completely raw version)

1 tbsp water

Directions:

Whisk all ingredients together until smooth and creamy. Add additional water if needed to reach desired consistency.

To Assemble:

Layer the vegetables and apples in a bowl, sprinkle generously with walnut crumble, and drizzle with the dressing before serving.

🥥 Nourish: Homemade Cranberry Almond Energy Bites

Need a quick breakfast, healthy snack, or afternoon pick-me-up? These energy bites came together using simple pantry staples and quickly became a family favorite.

Naturally sweetened with dates and packed with almonds, oats, coconut, and cranberries, they’re perfect for meal prep and grab-and-go mornings.

Homemade Cranberry Almond Energy Bites

Ingredients

  • ½ cup crunchy almond butter

  • 8–10 soft dates, pitted

  • 2 packets instant oatmeal

  • ½ cup sweetened shredded coconut

  • ¼ cup dried cranberries

  • ½ cup slivered almonds

  • Pinch of sea salt

  • ½ tsp cinnamon (optional)

Directions

  1. Process the dates in a food processor until they form a sticky paste.

  2. Add the almond butter and process until combined.

  3. Add the oatmeal, coconut, cranberries, almonds, salt, and cinnamon.

  4. Pulse until the mixture comes together.

  5. If the mixture is too dry, add 1 teaspoon of water or coconut milk at a time until it holds together when squeezed.

  6. Roll into bite-sized balls.

  7. Refrigerate for at least 30 minutes before serving.
